I live in SoCal. I saw this in real time. My fiancé who was driving called me “what the fuck is that? Is it a missile? Is it a comet? I’m scared, I’m going to call my dad”. I’m in a customers yard, customer: “what the fuck is that? Is that a nuke? Jesus what is that?” I’m starting to get freaked out too. Then I see the stage separation and it clicked. After many MANY hours of kerbal space program I realized it was a rocket launch, stage separation, and the first stage falling away as the second stage engine kicked on with a much wider exhaust effect. Here is a photo I took. You can see where the rocket staged, the first stage as a white dot behind the rocket flying away with plume.

To be clear this is a falcon 9 and it’s booster turning in flight back for landing. That’s why the plume is so large.
